“What type of cake do you want us to bake for your birthday, Matthew?” “Oh…..I want pie! Apple Pie,” he replied. Matthew was back in Iowa from California for the holiday weekend, so we celebrated his birthday. The cousins had such a wonderful times playing together. When it was time for us adults to start on the pie, the younger crew was invited to the table to assist. The kiddos thought it would be the perfect opportunity to bring out their pocket knives. They “whittled” the peelings away, chopped and sliced and worked so hard at cutting up the apples.
Everyone got involved in preparing Matthew’s birthday pie.
Even Matthew, sitting next to the left of Grandma enjoyed working on his pie. We laughed and told stories. They learned how to chop and slice the safer ways, with their sharp knives.
Addison helped with the crust. Then we carved some balloons in for the vents as Matthew is a balloon LOVER.
I think Matthew liked the looks of his deep dish pie for his “birthday cake.”
While the rest of us were chopping apples at the kitchen table, Lincoln was chopping lettuce at the counter. He was working on the main course, Walking Tacos. He, too, was using a knife which make little boys very happy!
Matthew was happy to celebrate his birthday on the farm with his cousins.
Annie placed the candles in the birthday pie and invited everyone to come…..especially the birthday boy, Matthew.
- 1½ C sugar
- ½ C flour
- ½ t nutmeg
- 1 t cinnamon
- ¼ t salt
- 10 C peeled and sliced apples (Granny Smith or another tart baking apple. I used 8-10 apples)
- 3 T butter
- Pastry for 2 crust pie
- Preheat oven to 425 degrees. In a large bowl stir together sugar, flour, nutmeg, cinnamon, salt and apples. Turn into 9x13 pan and dot mixture with butter.
- Pastry: If using prepared refrigerated crust, overlap the dough so that it is 1" longer than the length of the dish. Add to the corners of the crust to create more of a rectangle. Flute the edges or turn them under. Cut in some vents on the crust. Bake approx an hour or until the apples are soft and juices bubble. Best served warm. Ice cream or Cool Whip for topping.
Our family spent many hours together over the weekend. We worked together, played together, worshiped together and prayed together.
