Today’s May Day!
Happy May Day! What a wonderful day to usher in Springtime flowers, green rolling hills and baby calves sprinkled over the pasture ground. Yet today feels a little more like early April. The warmth of the sunshine helps this very windy chilly day. The grass needs a good clipping, yet I think I’ll wait for tomorrow to come with warmer temps and a breeze, not a wind!
May Day Birthday!
Typically, you can find chili soup dished up on my table in fall and winter, but not May. Today is an exception, though….for two reasons. One: the chilly weather and two: My friend, Ramona loves chili and today she celebrates seventy odd years. Yes, her birthday happens to be on May Day! She became a little May Basket child to her family. How wonderful. Since May feels more like March today, I made a pot of chili and took some to my sweet friend. Warming it up in the microwave, she seemed ready to eat her chili, whether I stayed or left. :)She told me just the other day that she liked my chili, so I decided this might be a nice birthday gift. Yep, a big smile came upon her face as she opened the bag.
Well, you won’t have a bit of trouble making this recipe, I promise.
From start to finish, this simpleton takes about 15 minutes. Of course, a long simmer does chili good. Even the next day this soup tastes better, as you already know. What a joy to open the refrigerator and be surprised by a left-over-pot of soup. 🙂 I honestly don’t recall throwing left-over chili away, do you?
Well, that’s my recipe “chili/chilly” story and I’m stickin’ to it! Hope you enjoy this plain and simple yummy dish.
Food for the Soul
This Scripture passage is a good one to remind us to keep on praying, even when we don’t feel like it:

De’s Easy Chili
Ingredients
- 1 1/2 lb. ground beef
- 1/2 C chopped onion
- 1 t minced garlic, optional
- 3 t chili powder
- 1 t salt
- 1/2 t pepper
- 1-2 t sugar
- 15 oz can chopped tomatoes and green chilies
- 30 oz can chili beans
- 50 oz can tomato juice
Instructions
- Brown meat and onion over medium hi. When meat starts to stick a little on bottom of pan, add 1/4 C water. This makes a nice broth. Add minced garlic, the spices, tomatoes, beans and tomato soup. Simmer as long as you like; the longer the better. And, chili soup is always a winner left over.

This reminds me of my mom’s chili! I’ve tweaked it a bit and now I use a can of good ole Campbell’s tomato soup (it thickens it a bit) and I use Bush’s Chili Magic and leave out the chili powder. (I usually put chili powder on the table so if any want it spicier, it can be added!
