The weeks leading up to Christmas are crazy busy for our family. We have many added obligations such as kiddos concerts, holiday gatherings, birthdays and end of year books on top of the usual already full schedule. When things get hectic, it’s easy to get take out or swing through the drive through. Living in a small town we don’t have a lot of restaurant options (which can be good or bad, depending on your perspective). I typically find it to be a good thing, it forces me to cook at home which is more economical and usually a healthier option.
With all the rushing around we often get home right in time for dinner, putting a quick yet delicious meal on the table is essential. In these moments I’m pleased to have this Doritos Chicken Casserole recipe, it fits the requirements of quick and delicious.
Use leftover or rotisserie chicken and this meal can be on your table in 30 minutes with minimal work. Super easy to assemble and bursting with flavor…I mean, how could it not…the bottom layer is Doritos. Yum!
Doritos Chicken Casserole
Ingredients
- 2.5 cups cooked chopped chicken (rotisserie works great)
- 8 oz sour cream
- 1 10.75 oz can cream of chicken soup
- 1 10.75 oz can cream of mushroom soup
- 1 10oz can Rotel
- 1 11oz can of corn, drained
- 2 cups shredded Mexican cheese
- 1 bag of nacho cheese Doritos
Instructions
- Preheat oven to 350 degrees. Spray 9x13" pan with cooking spray and set aside.
- Crush the bag of Doritos and cover the bottom of the dish
- Set aside 1 cup of shredded cheese. Mix together the remaining cup and all other ingredients in a large bowl. Pour chicken mixture over Doritos
- Bake uncovered apprx 20 minutes. Top casserole with remaining 1 cup of cheese and bake an additional 5-10 minutes until cheese is melted
