Easter is one of our favorite holidays to celebrate! Not only does it initiate us into the Spring season, but it is also a welcome reminder that Jesus, our Savior, “Has Risen”! Hallelujah!
Have you colored the hard boiled eggs? Do you have your menu made? Yesterday, I spotted tulips sprouting up in the front yard! Get ready for the grass to turn green right before your eyes in the next couple weeks. I’ve seen the robins digging for worms…the geese have come back from the South. Earlier in the week, at one of the nearby lakes, we spotted a trumpeter swan and her baby, cygnet! The days are getting longer, and Spring is almost here.
On the farm, baby calves are being born. We have had unseasonably warmer temps for the month of March, making for an early start on fieldwork for those farmers. As you are preparing and planning your Easter celebration, here are some of our favorite recipes we think you will enjoy:
Pineapple Dream – a creamy pineapple delight.
Pineapple Pretzel Salad – light and fluffy combined with savory pretzels for crunch.
Deviled Eggs – Mmmm….deviled eggs are a must! Have these for an appetizer or serve with a relish tray.
Ambrosia Salad – Fluffly sweet and sour salad – add your favorite fruits.
Easy Lemon Mousse Salad – citrusy, refreshing, and beautiful! Add kiwi and raspberries to garnish.
Resurrection Cookies – a fun and tasty reminder of the empty tomb! Great to do with kiddos!

Quick and Easy Fruit Pizza– bright, refreshing, delicious!

- •1¼ c unsweetened applesauce (or oil)
- •2 c sugar
- •3 eggs
- #2
- •2 c flour
- •1 tsp baking soda
- •1½ tsp baking powder
- •½ tsp salt
- •1 tsp cinnamon
- #3
- •2 c grated carrots
- •1 c coconut
- •1 c chopped nuts (optional)
- •1 tsp vanilla
- •1 cupcrushed pineapple (not drained!) {use the pineapple in juice not syrup}
- Cream Cheese Frosting:
- •½ c butter (softened)
- •8 oz cream cheese (softened)
- •1 tsp vanilla
- •1 lb powdered sugar
- Preheat oven to 350 degrees.
- Combine #1 ingredients. Add #2 ingredients. Stir in #3 ingredients.
- Pour into a lightly greased 9 x 13 or two 8 or 9-inch pans.
- Bake for 35-40 minutes or until a toothpick comes out clean. Let cakes cool completely.
- For the frosting:
- Beat the butter and cream cheese until nice and fluffy. Add in the vanilla and powdered sugar and beat until nice and smooth. Often times, I double this recipe. Invert the cake onto a cake plate or stand.
- Apply a generous dollop of frosting and spread...
- Gently place the second cake on top and continue frosting. Decorate as desired. I sprinkled chopped pecans and coconut on top.
