It still feels like winter here in Iowa. This week, we got a few super days of sunshine and warmer days. Then, today, we are back to cold, wind, and even more snow…again! It does seem like one of the longest winters I can remember…
So, on this chilly day, comfort food was right down my alley. Of course, my kids just love their mac & cheese (I do too, most of the time). My daughter has been making it, and her new twist is sprinkling in some of the powdered cheese on top (as you can see in the photo).
With our home grown beef, ground beef is a staple for a go-to meal. I’ve tried lots of wonderful Sloppy Joe’s, and this one is now a favorite. This is easy for supper, or would be convenient for a meal to take out to the field. With planting just a few days away, I am ear-marking this one!
- 2 lbs. ground beef
- ⅓. chopped onion
- ½ (1.25 ounce) envelope onion soup mix
- ½ c. mayonnaise
- 1 c. shredded cheddar cheese
- 12 buns
- pickles for topping (optional)
- 1 T. butter (for buns)
- Preheat oven to 350 degrees. Cover a baking sheet with aluminum foil and cooking spray.
- Brown ground beef with chopped onion on medium-high heat. Add salt and pepper as desired. While beef is cooking, add in onion soup mix. Once beef is evenly browned, and no longer pink, remove from heat and drain. Let cool.Then add in mayonnaise and cheddar cheese.
- Lay out the bottoms of the buns on the prepared baking sheet. Spread with the beef mixture on top and place the remain top. Melt butter in microwave and brush buns with butter. Cover with another layer of aluminum foil. Bake in preheated oven for 30 minutes Serve with sliced pickles and macaroni and cheese
