Egg Roll In a Bowl (Keto, Low-Carb)

Hi friends! I have a DELICIOUS, quick and easy meal to share with you today. And did I mention that it’s super healthy? 

This scrumptious dish is called Egg Roll in a Bowl. 

Do you love the flavors of egg rolls as much as I do? I love the flavors but don’t need to eat a deep-fat-fried, high carb dish. So enter this perfect solution of a meal!

This meal is found in my favorite cook book, Trim Healthy Mama Cookbook, which I have loved for many years but which I have come to treasure even more since being diagnosed with type 1 diabetes in 2018. All of the dishes are packed full of great nutrition and are very carb-conscious. Check it out here

Anyway, back to Egg Roll in a Bowl… the flavors of ginger, sesame seed oil, soy sauce, and garlic perfectly capture the essence of egg rolls. And the cabbage added at the end adds heartiness, nutrition, and a little bit of crunch. Best yet, this meal is ready from start to finish in about 20 minutes. 

My entire family loves this dish. I’ve made it with ground beef, ground turkey, and ground chicken; I just throw in whatever we’ve got on hand. Give it a try soon- you’ll love it!

Egg Roll In a Bowl (Keto, Low-Carb)

Cook Time 20 minutes
Total Time 20 minutes
Serving Size 8 servings

Ingredients

  • 2 tsp sesame oil
  • 1 lb ground pork beef, turkey, or chicken
  • 2 16- oz bags coleslaw mix
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 stalks green onion finely chopped
  • 1 tsp ginger ground
  • 1/3 C soy sauce
  • mineral salt to taste
  • black pepper to taste
  • 1/4 tsp crushed red pepper flakes or Sriracha sauce optional
  • Toasted sesame seeds for optional garnish

Instructions

  • Instructions
  • Brown meat in large frying pan until fully cooked.
  • Turn heat to medium-high and add chopped onion (not the green onions yet) and sesame oil. Increase heat to lightly brown the onions.
  • In a small bowl, mix together the garlic, ginger and soy sauce and add to pan, and then immediately add the sliced cabbage and stir. Cook for a few minutes, stirring often, so that it doesn't burn and so all cabbage slightly wilts and reduces in size.
