We have been in summer mode for months and loving it. Long days playing outside, baseball and the county fair. Ahh, yes….summer is my favorite time of year. Not only are there so many fun outdoor activities, but those recipes that have been in hibernation all winter are back in rotation. Along with Simple Strawberry Pie, https://www.theginghamapron.com/simple-strawberry-pie/, Fresh Peach Pie is on our summer rotation regularly. This recipe, which came from my mom, is easy to make and much lower in calories than the traditional peach pie (you know, with the two beautiful crusts your grandma makes).
- 1 Pie Shell (baked and cooled, graham cracker or vanilla wafer...you choose!)
- 1 cup Sugar
- 1 3 oz package of peach jello
- 2 Tbs corn starch
- 1 cup boiling water
- 3.5-4 cups fresh peaches sliced (with or without skin, your preference)
- Mix together the sugar, jello and corn starch
- Add to boiling water and continue to boil for approx. 2 minutes or until clear and thick
- Slice peaches and place in pie crust of your choice
- Pour cooked sauce over peaches and refrigerate pie until cool and set
- Serve with whipped cream
Of course, it wouldn’t be a complete summer night if we didn’t check the cows before bedtime. Such fond memories of loading the kids up in their pajamas, driving to the pasture with the windows down and checking the cows together. Always a fun time filled with hilarious kiddo questions, conversation, fresh air and usually a stop at the local drive in for ice cream on the way home. Now, this is Summer! 🙂
