Do you have a garden? I don’t technically have a traditional garden, but I do have lots of pots out on my deck that are working as a “container garden”. But in reality, I probably don’t really need one. I have many friends and family whom have their own garden and apparently have very green thumbs and graciously share their abundance with my family. How awesome, huh? Maybe someday I will have my own garden and repay them with fresh picked goodies.
This pasta is a delicious combination of fresh tomatoes, fresh basil, garlic and parmesan cheese. Perfect blend of fresh Italian flavors from your garden to serve up as a main dish or a side to meat off the grill. Enjoy!
- 2 pints cherry tomatoes, halved or quartered (personal preference)
- 3 large garlic cloves, minced
- ¼ cup good olive oil
- 9 large basil leaves, julienned
- ¼ teaspoon crushed red pepper flakes
- ¼ tsp fresh ground pepper
- ¾ cup parmesan cheese
- 8 oz angel hair pasta, dry
- Combine cherry tomatoes, olive oil, garlic, basil, red pepper flakes, salt and pepper in a large bowl. Cover and set aside to marinate. (Minimum 2 hours marinate)
- Just before ready to serve, cook pasta according to package directions.
- Drain pasta well and add to the bowl of tomatoes and marinade. Gently stir in the parmesan cheese.
- Serve and Enjoy
