Fresh Tomato Basil Pasta

Do you have a garden?  I don’t technically have a traditional garden, but I do have lots of pots out on my deck that are working as a “container garden”.   But in reality, I probably don’t really need one.  I have many friends and family whom have their own garden and apparently have very green thumbs and graciously share their abundance with my family.  How awesome, huh?   Maybe someday I will have my own garden and repay them with fresh picked goodies.

This pasta is a delicious combination of fresh tomatoes, fresh basil, garlic and parmesan cheese.   Perfect blend of fresh Italian flavors from your garden to serve up as a main dish or a side to meat off the grill.  Enjoy!


Fresh Tomato, Basil & Parmesan Pasta

Ingredients
  • 2 pints cherry tomatoes, halved or quartered (personal preference)
  • 3 large garlic cloves, minced
  • ¼ cup good olive oil
  • 9 large basil leaves, julienned
  • ¼ teaspoon crushed red pepper flakes
  • ¼ tsp fresh ground pepper
  • ¾ cup parmesan cheese
  • 8 oz angel hair pasta, dry
Instructions
  1. Combine cherry tomatoes, olive oil, garlic, basil, red pepper flakes, salt and pepper in a large bowl. Cover and set aside to marinate. (Minimum 2 hours marinate)
  2. Just before ready to serve, cook pasta according to package directions.
  3. Drain pasta well and add to the bowl of tomatoes and marinade. Gently stir in the parmesan cheese.
  4. Serve and Enjoy
