Who DOESN’T like going to a Mexican restaurant? Mexicans have a wonderful way of throwing a party! And their food is SO good! Don’t you just love how you’re greeted with warm chips and salsa? Now that’s hospitality if you ask me. The colorful decor and lively music capture that feeling of a fiesta (celebration) just waiting to happen.
Choosing what to eat creates quite a problem for me. As much as I wish to try something new, it is quite hard for me to get out of my “comfort zone” and order something new. Yes, I often stick to the ” ‘ol regular” since I love it so much! Admittedly, I’ve never been dissatisfied with anything on their menu.
And then comes postre (dessert)—–if I have any room in my tummy left. (I usually don’t but I order anyway as my sweet tooth just won’t keep quiet!) Should I choose sopapillas, churros or fried ice cream? Those are my top three dessert choices. How about you?
Last Sunday our family enjoyed eating at our Mexican Restaurant! The food was delicious. Our Honduras waiter did a fine job of serving our party of 11. Someone in our group told him that there was a birtday girl in our little crowd. He swung into action and before you know it, here he came with a lovely dish full of fried ice cream in one hand and a sombrero in the other. He delivered it to Shelby’s place, stuck his finger in the whipped cream and dabbed a little on her nose as he led us in the Happy Birthday song, honoring our Shelby.
Needless to say, we had a great time!
Well, today I’m serving up helado frito (fried ice cream). It’s fun, festive and can be made in advance. Well, most of it anyway. Have you made it? Give it a try! You’ll be so glad you did!
Fried Ice Cream
Ingredients
- 1/2 gallon of vanilla ice cream my preference
- 2 1/2 C cornflake crumbs
- 1 T vanilla extract
- 2 T sugar
- 2 T brown sugar
- 1 t cinnamon
- 1 dozen flour or corn tortillas
- 1/3 C vegetable oi or Crisco
- Top with your favorite toppings:
- Whipped Cream or Cool Whip
- Pureed or chunked strawberries
- Hot fudge sauce or chocolate syrup
- Honey
- Maraschino cherries
Instructions
- Preheat oven to 350 degrees. Take ice cream out of freezer and let it thaw a few minutes.
- Stir together cornflake crumbs, vanilla, sugars, and cinnamon. Place on cookie sheet and bake for 5 minutes. Cool completely. Place in a bowl. Scoop out ice cream and make into balls the size of a tangerine. Roll in crumbs and place on cookie sheet or in plastic container and move to freezer. If you have leftover crumbs, place in freezer bag and freeze for another day.
- Pour oil or Crisco into skillet and heat to 375 degrees. Fry tortillas one at a time, quickly and drain on paper towels. Optional: sprinkle with cinnamon and sugar (lightly). Place in an air-tight container if you are frying them ahead of time. I like to fry them right before serving.
- Top with your favorite toppings. Enjoy!
