Sloppy Joe’s are always a great “go-to” recipe at our house. They make dinner quick, and are a filling hot sandwich we all devour. I like this recipe because it has more of tomato and bean base in it. When I came across this recipe and saw Frito’s on top of the sandwich, I immediately wanted to give it a try! Fritos are that salty delicious crunch that really enhance all the goodness. They’re a no-fail additive, really. So if you’re looking for an easy-weeknight dinner for the busy nights ahead, then I think you will really enjoy this one!
Frito Sloppy Joe's
Ingredients
- 1 1/2 lbs. ground beef
- 1 yellow onion chopped
- 1 can ranch beans
- 1 c. enchilada sauce mild
- 1 c. tomato sauce
- 2 c. shredded cheddar cheese
- 4 brioche buns
- 1 pkg. 9 3/4 oz. Fritos corn chips
Instructions
- Cook the ground beef and onions together over medium heat, breaking into crumbles, until onions are carmelized, and beef is no longer pink - about 10 minutes.
- Add tomato sauce, enchilada sauce, and beans. Cook until sauce reduces slightly and mixture is "sloppy" approximately 5-6 more minutes.
- Top brioche buns with beef mixture, then cheddar cheese, and Frito chips.
