I know a few men in our family who love German Chocolate cake – my husband is one of them. I typically make it for his birthday. But I am thinking Father’s Day may be another occasion to enjoy this treat. He really loves anything coconut – so mostly I think the chunky coconut frosting is his fave.
These cupcakes are just a box mix that I used for the cake; however I made two homemade frostings – so I simplified by not making it all from scratch. One frosting is for the typical over the stove-top egg yolk coconut pecan frosting. The other is for the chocolate cream frosting on the outside. Then I garnished each cupcake with a pecan. Talk about rich chocolatey decadence all in one!
Coconut Pecan Frosting
Ingredients
- 1/2 c. evaporated milk
- 2 egg yolks
- 1/2 c. packed light brown sugar
- 1/4 c. unsalted butter diced into pieces
- 1/2 t. vanilla extract
- 1 c. sweetened shredded coconut
- 1/2 c. chopped pecans
Instructions
- In a medium saucepan, combine evaporated milk, egg yolks, brown sugar, and butter. Cook mixture over medium heat, stirring constantly - until thickened (approx. 10-15 minutes). Once it comes to a light boil, and is thickened, remove from heat and strain through a mesh strainer into a mixing bowl. Stir in vanilla then mix in shredded coconut and chopped pecans. Allow to cool at room temperature before frosting.
Chocolate Cream Frosting
For the Chocolate Frosting:
4 oz. semi sweet chocolate ( I used chocolate chips)
6 T. unsalted butter, softened
3 oz. cream cheese, softened
1 1/4 c. powdered sugar
2 1/4 c. cocoa powder
2-4 t. heavy cream, as needed
Instructions:
Place semi-sweet chocolate chips in microwave safe bowl, heat at 30 second intervals, stirring at each one. Once chocolate is smooth and melted, set aside and allow to cool slightly. In a bowl of an electric mixer with paddle attachment, whip together butter and cream cheese on medium speed until smooth and fluffy. Blend in cocoa powder then add in powdered sugar on low speed. Add in cream one teaspoon at a time, until frosting reaches desired consistency.
To frost cupcakes, use a spatula to place coconut pecan frosting, then using a piping bag and tip outline the cupcake with chocolate frosting.
