Today, we made this delightful and delicious sponge biscotti, and I can’t wait to tell you all about it! I’m especially excited to share this recipe with our gluten-free readers.
Recently, I made a new friend, Laurie. We met because she taught a food photography class, and let me tell you, her food photography is amazing! You can check it out at her fun website, Dalla Mia Cucina.
And then I learned that in a quest for better nutrition for her family, Laurie developed a gluten and grain-free flour called Kuwl Flour. Yesterday, Laurie shared a few of her company’s products with me, including the Kuwl All Purpose Baking Flour, and she also shared a treasured family recipe, sponge biscotti. So today, the kids and I had fun making the biscotti. I have the be honest; I’ve not had the best results using gluten free flour before. Baked goods that we’ve tried have had a course texture and a funny flavor. But as this biscotti was baking, the kitchen smelled delicious and my hopes were rising. We pulled the dish out of the oven, waited for it to cool, and then dusted the top with powdered sugar. And then the moment of truth… would this be as good as biscotti made with regular flour? YES! Absolutely! The end result was a moist, flavorful, excellent, delicious treat that had a lovely light texture. And I loved that the dunked biscotti tasted a lot like tiramisu, one of my favorite desserts.
And then we gathered around the table for a delightful coffee and biscotti-dunking time, full of laughter and smiles. We talked about our day and really enjoyed just being together. Isn’t it fun how great food brings family together? I love that God gave us the gift of so many wonderful foods. Taste and See that the Lord is good, right?

- 6 Eggs
- 1 C Sugar
- ¾ C Oil
- 2 t Vanilla
- 2 C KUWL Artisan Baking Flour
- 3 t Baking Powder
- For the topping:
- Powdered Sugar
- Preheat oven to 350 degrees. Prepare 9x13 (4-5 quart) oblong baking dish with cooking spray.
- In mixer, blend eggs till creamy and light, add sugar and oil, mix till light and airy. Add vanilla and mix till incorporated. Through a sieve or sifter, add Kuwl Flour and Baking Powder to wet ingredients.
- Mix till well blended. Pour into prepared baking dish.
- Bake for 20-25 minutes. Let cool completely and then dust with powdered sugar. Slice into long
- biscotti like bars.
