Who doesn’t love fresh out-of-the-oven yeast rolls?
You could always count on my mom to bake homemade rolls for family gatherings. She loved this recipe because you could make it ahead of time and let the yeast do it’s work, in the refrigerator. Then, the morning of the holiday gathering, Mom would get out a good-sized jelly roll pan (with walls) and fill it full of dough balls for the dinner. Oh, the smell of baking bread! Simply heavenly!
Hard to believe this recipe has been in our family for over 50 years. Mom got it from her friend, Jane, when we moved to town.
Hope you love it as much as we do. It’s so nice to make up a batch ahead of time, no matter what the occasion is, and have it already to go.
Grandma Betty's Refrigerator Rolls
Ingredients
- In a large mixing bowl dissolve the following:
- 1/2 C sugar
- 1/2 C shortening
- 1/2 C boiling water
- Let cool.
- In small bowl dissolve:
- 2 packages yeast in 1/2 C very warm water like bath water temp
- In first bowl add:
- 1 1/2 C cold water 2 well-beaten eggs, the yeast mixture and 2 t salt.
- Add 4 C flour and beat with mixer. Add 3 more C flour and mix by hand.
- Empty dough into well-greased bowl with lid. (I use a large Tupperware bowl or a 5-qt ice cream bucket. Snap on the lid and refrigerate at least 2 hours. Can be kept in refrigerator up to 2 weeks. This dough makes excellent dinner rolls or sweet rolls. Bake 350 degrees for 20-30 minutes.
This is one recipe which is always a must for me during the holidays. It makes life easier and puts smiles on many faces.
