Grilled Jalapeno Popper Chicken

Hello friends! How is your summer coming along? Are you making plans to spend time with a special dad in your life on this Father’s Day? 

We love to grill almost everyday in the summers, and Father’s Day is no exception.  My husband is the grill master in our family, and I wanted to share with you a delicious recipe that he recently made for us.  Maybe you’ll want to make it this Sunday to make your Father’s Day meal extra special. 

This is jalapeno popper chicken!

Start with grilled chicken breasts. Smother with seasoned cream cheese, grilled jalapenos, smoky bacon, and sharp cheddar, and you’ve got yourself a winner!

Grilled Jalapeno Popper Chicken

Grilled Jalapeno Popper Chicken

Prep Time 10 minutes
Cook Time 20 minutes
Total Time 30 minutes
Serving Size 1 piece per person

Ingredients

  • boneless skinless chicken breasts 1 half per person
  • jalapenos cut in half and seeded, 1 half per serving
  • bacon 1 piece per serving cooked or grilled to crispness
  • 4 oz cream cheese
  • smoky paprika cayenne, or Tabasco for seasoning
  • sharp cheddar cheese 1 slice per serving

Instructions

  • Grill the chicken, seasoning with salt and pepper, garlic powder and onion powder.
  • Grilled the jalapenos until somewhat blackened and cooked through.
  • While the chicken and peppers are cooking, place the cream cheese in the microwave for about 15 seconds or until it is warm enough to spread easily. Season with smoky paprika, cayenne, or hot sauce to make it as spicy as you like!
  • When chicken is cooked through, spread a few teaspoons of the cream cheese on top of each chicken breast.
  • Top with one half of a jalapeno, one slice of bacon, and one slice of cheddar.
  • Continue grilling with grill cover closed until the cheese is melted.
  • Serve with BBQ sauce if desired.
