We’ve been hit hard with the Arctic Blast this week (and that is no understatement). Truly it has been record-breaking frigid temperatures. School was cancelled and life-threatening weather advisories were in effect. Frost bite could occur in less than fifteen minutes outside. Needless to say we have been spending a lot of indoor time lately. 🙂
We’ve been keeping busy indoors with crafting, movies, puzzles, and games. Repeat and repeat. 🙂 I love having a pot of soup to warm up with during these incredibly chilly days. I saved some of our leftover ham from Christmas; it made this soup so easy to pull together. The garlic aroma gives off some wonderful smells. The potatoes add heartiness. It’s a tasty soup that is just the ticket for grazing and staying cozy.
Ham & Potato Chowder
Ingredients
- 3 T. oil or butter
- 1 onion diced
- 2 carrots diced
- 2 stalks celery diced
- 2 cloves garlic chopped
- 1/2 t. dried thyme leaves
- 1/4 c. flour
- 2 c. chicken broth
- 2 c. milk
- 1 1/2 lbs. potatoes diced and peeled
- 8 oz. ham diced
- salt and pepper to taste
Instructions
- Heat oil in a large sauce pan over medium-high heat. Add the onions, carrots, and celery until tender.
- Mix in the garlic and thyme and flour and cook until the flour is lightly browned, about 2-3 minutes.
- Slowly stir in the broth, deglazing the pan as you go, add the milk and potatoes. Bring to a boil, reduce the heat and simmer until the potatoes are tender. About 10 minutes.
- Add the ham. Cook until heated and season with salt and pepper.
