Happy Mother’s Day (early) to all of the wonderful mothers out there!
The older I get, the more and more I appreciate all the hard work my mom put in for our family and others. She is giver. She brings gifts and is always willing to give what she has. She gives her very best all the time. She puts others first and herself last. Gracious. Loving. Compassionate. Hard-working. Self-less. Leaving her sparkle wherever she goes. Thank you, Mom! You are so loved.
My mom has always been a fabulous host for hospitality. I think it comes naturally to her and she can make everyone feel welcome and loved. When I was a child, she would host gingerbread house parties annually for moms and kids at Christmas. Candy. Frosting. Children…Amazing. Well, you get the idea 😉
The door to our home was always open. We had foreign-exchange students with us over several months. We enjoyed field trips together. We learned from each other by cooking for them, and then they cooked some of their traditional Japanese food for us. Life long friends who would visit and stay throughout the summer. On happenstance, a group of bikers- that biked across Iowa – stayed with us and then presentation to my sixth grade class. Pastors and long distance relatives joined us often at Thanksgiving and Easter. Everyone was welcome.
For Mother’s Day, I often think of a light, refreshing dessert to enjoy. With Mother’s Day in spring, I like to go with lemon or blueberry. This year, I am going with this lovely layered lemon dessert that sounds and looks like a delicious treat to share with Mom. Enjoy this special day!

- 1½ c. all-purpose flour
- 1½ sticks butter
- 8 oz. cream cheese, softened
- ¾ c. powdered sugar
- 1 22 oz. can Lemon fruit filling
- 1 t. vanilla
- 8 oz. frozen whipped topping, thawed
- Preheat oven to 350 degrees. Grease a 9 x 13 - inch baking pan. Mix flour and butter; spread in pan. Bake for 20-25 minutes or until golden. Let crust cool.
- Mix cream cheese, powdered sugar, Lemon pie filling, vanilla, and half of the whipped topping together. Spread remaining whipped topping over pie filling mixture.
- Cover and chill until ready to serve.
- Garnish with lemon slices.
