I was flipping through a local magazine yesterday and came across a recipe section for healthy recipes. There was a recipe for avocado chicken salad…which immediately reminded me of my recipe. I had just roasted a chicken last night…so, you guessed it. I whipped up a batch of Avocado Chicken Salad today for lunch. It’s a great recipe that is packed full of healthy fats and protein. Substituting plain Greek yogurt for part of the mayo makes this dish much lower in fat and calories, without losing the flavor. Serve it as a sandwich, on a bed of lettuce or my favorite plain with a side of pita chips. 🙂
- 2 cups chopped chicken
- 1 avocado, diced
- ¼ cup mayonnaise
- ¼ cup plain greek yogurt
- ½ tsp garlic powder
- ½ tsp salt
- ½ tsp pepper
- 1.5 tsp lime juice
- fresh cilantro for topping, optional
- Mix all ingredients into a bowl. Cover and refrigerate 30 minutes or more to let the flavors blend together.
- Serve as a sandwich, on a bed of lettuce or with pita chips
