We made this sugar-free, low-carb meatloaf at our house last week, and it was so so delicious! The kids gobbled it right up, even though it had been “healthified.”
We have always loved meatloaf, but I hadn’t made it for a few years because most recipes are full of white bread and sugar, two ingredients that our family tries to avoid. But I got creative with this recipe ,and it turned out to be just as delicious as the non-healthy variety.
I made 4 ingredient changes. Instead of regular milk, I used almond milk. Instead of white bread, I used Ezekiel Bread. I swapped out the ketchup for sugar-free ketchup, and used a brown sugar sugar substitute. I find all of these ingredients at Wal-Mart.
Anyway, back to the meatloaf. We love, love, love this meatloaf! The bacon-wrap adds so much flavor, and the tomato sauce is tangy and sweet and perfect. I think you’ll love this recipe for a weeknight family dinner soon.
I bake this on a broiler pain, which allows the fat from the meat to drain. I cover the bottom of the broiler pain with foil to save a lot of clean-up time later.
Healthy Bacon Wrapped Meatloaf

- 1 broiler pan
Ingredients
Meatloaf
- 1 C almond milk
- 6 slices Ezekiel bread or other low-carb bread
- 2 pounds ground beef
- 1 C Parmesan cheese
- 1 tsp salt
- 1/4 tsp garlic powder
- Freshly ground black pepper
- 1/4 C parsley minced, fresh or dried
- 8 slices bacon
Tomato Sauce Topping
- 1 ½ C sugar-free ketchup
- 6 Tbsp brown sugar subsitute I use Swerve
- 1 tsp mustard
Instructions
- Preheat oven to 350°
- Pour the almond milk over the bread and allow it to soak for several minutes.
- Place the ground beef, milk-soaked bread, Parmesan cheese, salt, garlic powder, black pepper, and parsley in a large mixing bowl. Stir in the eggs.
- With clean hands, mix the ingredients until well combined.
- Form the mixture into a loaf shape on the broiler pan, which will allow the fat from the meat to drain. Make sure to line the bottom of the broiler pan with foil to make clean-up easier!
- Lay the bacon slices over the top of the loaf, tucking them underneath the meatloaf.
- Make the tomato sauce topping by stirring the ingredients together in a small bowl. Pour the topping over the loaf.
- Bake for 1 hour.
