As I am learning about egg casseroles, quiches, and frittatas, quiches have milk and cream while frittatas typically do not. Frittatas mostly start out on the stovetop and then finish the remaining cooking in the oven. I love to finish off my eggs with some delicious sriacha or fresh salsa.
I’ve been trying to get more creative in the kitchen by using more of what I have (in the pantry) and less buying (of something specific) to make a particular recipe. This morning was one of those days! Sometimes my ‘type A’ personality can take over and I can get very picky about having all of the right ingredients just to make one recipe. Is anyone else that way?
Add your favorite vegetables
Well, you don’t have to be as rigid with this wonderful crustless quiche. One will definitely need eggs, milk, and some cheese, but add or subtract (as you like) with the vegetables. Yippee! I had plenty of eggs and cheese, but only a few sparse veggies remained in the fridge to whip up a healthy egg bake. Like a handful of kale and some almost ready to pitch green onions. Voila! Add them to the quiche and a healthy, delicious, breakfast is ready!
If kale is not something you enjoy or have on hand, it can be easily substituted with broccoli, spinach, or mushrooms. Tomatoes would be mouth-watering, too.
Healthy Breakfast Fritatta
Ingredients
- 1 clove garlic minced
- 1 T. olive oil
- 10 oz. fresh kale
- 1/4 c. green onions sliced
- 4 large eggs
- 1 c. milk
- 2 oz. feta cheese
- 1/4 c. parmesan cheese grated
- 1/2 c. mozzarella
- salt and pepper to taste
Instructions
- Preheat the oven to 350 degrees. Over low-medium heat add olive oil to frying pan. Add the olive oil and kale. Saute for about 3 minutes until kale is wilted. Using a non-stick skillet or a pie dish, lightly spray with cooking oil. Place the kale in the bottom of the pie dish. Followed by the crumbled feta.
- In a medium bowl, whisk together the eggs, milk, and Parmesan. Season lightly with salt and pepper. Add in the green onion. Pour the egg mixture over the kale. Top with shredded mozzarella cheese.
- Bake the crustless quiche for about 45-55 minutes. or until the top is golden brown. Let cool for several minutes before cutting into slices.
