Herbed Lemon Chicken

The month of May sure has been flying by.  It seems to be one of the busiest months of the year with holidays, graduations, birthdays, and school coming to an end.

 

Since we love the outdoors, I gladly utilize the grill as much as possible.  Not only because it makes meals so simple, but also because they taste great!  Because grilling and marinades just go together, they make life so easy – and they can be done ahead of time.  Voila!  This flavorful Herbed Lemon Chicken is just that – an easy marinade – then add grains (or carbs – baked potato, warm baguette), and a fresh salad – and dinner is ready.  Enjoy!

 


Herbed Lemon Chicken

Ingredients
  • 3-4 boneless, skinless chicken breasts, halved
  • ⅓ c. extra virgin olive oil
  • 3 garlic cloves, minced
  • ½ t. sea salt
  • ¼ t. black pepper
  • 2 t. finely chopped fresh parsley (1 t. dried)
  • ½ t. finely choppy fresh thyme (1/4 t. dried)
  • ½ t. finely chopped fresh oregano (1/4 t. dried)
  • ¼ t. finely chopped fresh rosemary (1/8 t. dried)
  • 2 T. lemon juice
  • ⅓ lemon, sliced
Instructions
  1. Place chicken in a gallon size baggie.
  2. In a small bowl, mix together olive oil, spices, herbs, and lemon juice. Pour in baggie with chicken and carefully seal. Marinade for 1-2 hours in refrigerator.
  3. Using a grill, set temperature on medium - medium high heat. Place chicken breasts on grill, and turn as needed. Cook until chicken is no longer pink in the middle.
  4. Remove from heat. Let cool for 5 minutes. Then serve with rice and / or salad. Garnish with a lemon slice. Use any left-overs for a wrap or sandwich the next day.
