Squash. I love this Autumn vegetable and tonight butternut squash is going to be served up on our dinner table.
Do you have a favorite? I’d love to hear. I’m most familiar with acorn and butternut. I’d also love to hear how you prepare it. For as long as I can remember, I’ve eaten it with butter and brown suguar and Mr. Farmer loves his dished up the savory way. What used to take an hour to cook now only takes minutes in the microwave. Honestly, though, if you’re not in a hurry the traditional oven method is the best if you asked me.
So….every time I serve baked squash, Mr. Farmer gets his half and I get mine. (I don’t have to share! : )
Whether you serve it the old-fashioned way or the microwave method, squash is delicious and so good for you. And it screams fall, harvest time, almost Thanksgiving. Will you have squash on your Thanksgiving table this year?

Ingredients
- 1 squash (I prefer butternut or acorn
- 4 Tbsp butter
- 1/4 C brown sugar
- Salt and pepper to taste.
Instructions
- Take a sharp knife and poke holes all around squash. Microwave for 5 minutes. Take out and slice the squash in half, lengthwise, from top to bottom. Scoop out and discard the seeds and innards 🙂 of each side until completely cleaned out. Microwave for another 5-8 minutes. Take out and f ill each hole with 2 Tbsp. each of butter. Place brown sugar in one hole with butter. Microwave for another 3 minutes until cooked through and butter and brown sugar melted and liquified. Test with a fork. Test with fork for doneness. Yum!
