Hot Corn Dip
A few days after the 4th of July, the first signs of our local sweet corn stand were showing it was now open. The yellow tent at its usual perching point was an excited welcoming for us to spot…again.
There’s just nothin’ like that fresh Iowa sweetcorn. I remember my Grandpa “Fa” eating as many as six with his supper on some occasions. When my kids were toddlers, they were eager to help with the the shucking, and I’ll always take up an offer of willing help
This appetizer is so easy, and goes great with that fresh sweetcorn. It uses approximately 3 cups of corn. Add in some mayo and cheesy goodness, and it’s the perfect appetizer for a grill out or a barbeque. Serve it warm with crackers or chips.
Hot Corn Dip

Ingredients
- 4-6 oz. cream cheese
- ½ c. mayonnaise
- 3 c. corn ( I use fresh sweetcorn)
- 1 c. grated cheddar cheese
- 2 c. grated mozzerella cheese
- ½ c. grated parmesan cheese
- ½ t. salt
- ¼ t. black pepper
- 5 slices of bacon - cooked and crumbled
- 2 green onions, sliced
Instructions
- Preheat oven to 350 degrees and grease a pie pan or loaf pan.
- In a large bowl, combine corn, mayonnaise, cream cheese, cheddar cheese, mozzarella cheese, and parmesan cheese. Stir well until fully combined. Season mixture with salt and pepper.
- Add crumbled bacon and green onions. Stir until combined.
- Spread the mixture in the prepared dish, and bake for 30 minutes or until bubbly.
- Serve the dip warm from the oven with crackers or tortilla chips.

Oh this looks interesting! We grow sweet corn so I am always looking for new ways to use it. If it doesn’t sell we freeze it. Some years it is a lot and others nothing. Nothing beats Iowa sweet corn straight from the field. I will be trying this out at our next get together!
Oh Lynne, I definitely agree! Fresh Iowa sweet corn is something we look forward to – and try to savor as much as possible! I am hoping to get some frozen soon to enjoy year round
