In the words of my preschooler “Holy Cow Smokes”…haha. It’s been a long month, between crazy schedules and almost one family member being sick at different times, we couldn’t be any happier for Spring. One morning, when I wasn’t feeling well and the kiddos asked for pancakes, I was pleased to remember this recipe of Pancakes in a Mug! Yes, 3 ingredient, individual serving pancakes in under 3 minutes without the clean up of mixing dishes and a griddle. Perfect! Just mix ingredients in your coffee mug, heat in the microwave and serve…could it be any more simple? Check out the recipe below!
- ½ Tbs Butter, melted
- ⅓ cup pancake mix (complete, just add water version)
- 3 Tbs water
- Combine melted butter, pancake mix and water to a microwave safe mug, mix well (can be lumpy)
- Microwave at 50% for approximately 1.5-3 minutes (pending microwave)
- Remove from microwave, top with syrup and enjoy!
