This can be made into a meal by adding grilled chicken and / or lettuce.

Iowa Caviar with Tortilla Chips

Ingredients
  • •1 can garbanzo beans, drained
  • •1 can black beans, drained
  • •1 can kidney beans, drained
  • •1 can corn, drained
  • •2 avocados, diced
  • •1 small red onion, diced
  • •½ C cilantro, chopped
  • •½ C Italian dressing
  • •¼ C sugar
  • •the juice of 2 limes, or 2 T lime juice
  • •½ t salt
Instructions
  1. Stir everything together and refrigerate until serving. Serve with tortilla chips or pita chips.
  2. Healthier Variation: Drain and rinse all beans, substitute with a reduced fat dressing. You can also skip the chips and just eat as a salad to lower calories.
  3. Add grilled chicken to make this into an entree.

  1. I’ll be making this today! I so enjoy your book with recipes and devotions and stories! I also live on a farm with my husband. Five kids and 15 grandchildren make our life very busy! Oldest grandchild is 25 and working in NYC and you get is 3 in Olathe, KS. Hope you have a great summer day. I too am outside every minute I can! I watch the sunrise daily on our wrap around porch and then do my devotions and prayer time. God is good!
