Happy Tuesday!
The weather is showing just a hint of Spring and I just got in from taking a walk with Jenny and Maggie. Of course the shoes got muddy, hiking around our lake as the frost has not gone out of the ground—remember…..it’s still February. We did see many flocks of noisy Canadian geese flying overhead. I do love their noisy honks. Aren’t they amazing, the way one gets to lead for awhile, then another takes over. So does the new pilot learn from watching?? Kind of reminds me of mentoring.
I’m involved in a service/mentoring women’s bible study for a few weeks. Last week our team hosted fourteen for supper, lesson and deep and rich conversation around the table. The topic for the evening was service. The main theme passage was the parable of good Samaritan. That man saw a need and he took action. He really didn’t care what people thought, either. He helped a man in desperate need; mended the man’s wounds, gave him a ride, found a place for him to stay, then paid for it. He used his time, his things and his skills. That simple. That profound. And when we do this, we honor the Lord Jesus, our most perfect example to follow.
Supper that evening was around an Italian theme. The menu was simple: Spaghetti and meat sauce, bread and a tossed salad (with Italian salad dressing tossed with Parmesan cheese, of course.) And for dessert? Italian Spumoni.
I filled the cups a few days in advance so that I wouldn’t be scooping hard ice cream while guests were waiting.
I stopped at our local drive -in. Their soft serve ice cream is so delicious. I bought plenty for all–approximately 3 quarts. Then I layered ice cream, chopped maraschino cherries, chopped almonds, homemade chocolate sauce and added a cherry on top of each. Some I drizzled chocolate and some I did not. A very tasty treat and all the hard work was done days in advance. I will certainly serve this one again.
- 3 quarts dairy soft serve ice cream
- 1 C your favorite hot fudge sauce or chocolate syrup
- 2 jar maraschino cherries, drained; 1 jar chopped; 1 jar left whole
- ½ lb of lightly salted almonds, chopped
- clearplastic punch cups
- Starting with ice cream, layer the ingredients, making sure to have 3 layers of ice cream.
- Let thaw for 5 minutes before serving. Finish with chocolate topping/hot fudge sauce and a cherry on top.
