I love Asian food! Do you, too? I absolutely can’t get enough of the combination of garlic, ginger, and soy sauce. When I needed to start eating low-carb a few months ago, I became determined to find a way to incorporate Asian food in my diet in a safe, healthy way. And this DELICIOUS, IRRESISTIBLE ( you’d never guess this was healthy!) Asian keto salad has allowed me to do just that.
Crunchy cabbage and almonds, bright and fresh cilantro, flavorful chicken, spicy sriracha, and a creamy peanut sauce- these are some of my favorite ingredients. And its just wonderful to eat something that I know is nourishing my body and helping me keep my blood sugars in check. Guilt free, stress free foods taste even more delicious in my book.
Even if you’re not strictly a keto follower or don’t have any sort of carb-restricted dietary needs, you should definitely give this salad a try. I took it to a party a few weeks ago and had two friends ask me for the recipe. I don’t think the thoughts of “healthy” or “sugar-free” even crossed their minds. 😉
A couple of time saving tips: This is a wonderful, effortless technique to quickly cooking up and shredding flavorful chicken. And if you don’t have time to shred a head of cabbage, just grab a bag of coleslaw mix.
Keto Asian Salad
Ingredients
- For the salad:
- 1/2 head of cabbage shredded
- 1/2 C of sliced almonds
- 1/2 C cilantro chopped
- 2 C cooked chicken breast shredded
- 2 T sesame seeds
- For the dressing:
- 1/2 C all-natural no sugar added peanut butter
- 3 drops liquid stevia or Splenda
- 1/4 C unsweetened almond milk
- 2 t toasted sesame oil
- 2 T rice vinegar
- 2 T apple cider vinegar
- 3 T soy sauce
- 1/2 t salt
- 1 t ground ginger
- 1/4 t sriracha sauce optional
Instructions
- Make the dressing in a small bowl by whisking together all of the dressing ingredients.
- In a large bowl, toss all of the salad ingredients and the dressing ingredients together.
- Garnish with extra cilantro and a little extra sriracha is you like spicy food. 🙂
