We had the MOST delicious, satisfying supper tonight, and I’m so happy to say that it was inexpensive and easy to make. What else could you ask for? Well, and it was low-carb, keto recipe, which is important to me as a diabetic and so important to many people who are carb-counting during this New Year.
I think that chicken thighs are so underrated! How about you? I just love how juicy they are and I love how the skin gets so crispy and delicious.

(Keto) Buttery Garlic Crispy Chicken Thighs
Ingredients
- 6 bone-in chicken thighs with skin
- 1/2 t sea salt
- 1/2 t pepper
- 8 T butter
- 2 T garlic minced
- 2 T chopped fresh thyme tarragon, sage, or your favorite herb
Instructions
- Season the chicken thighs with the salt and pepper. Melt 2 T of the butter in a large pan over medium heat. Once the butter, is hot, sear the chicken for about 10 minutes, turning once. Cook until golden brown on both sides and cooked through. Remove from the pan and set aside.
- Place the remaining 6 T of butter in the pan and heat on high until the butter starts to froth and get golden brown, stirring often. Turn the heat down to medium-high, stir in the garlic, and cook for about 2 minutes.
- Arrange the chicken thighs on a platter and pour the garlicky brown butter over chicken. Sprinkle with thyme or your favorite herb.
