Keto, No-Sugar Chocolate Covered Strawberries
Happy Valentine’s Day! I just love that we have a day in which we get to celebrate LOVE! A couple of verses that I am thinking about today are these:
I Corinthians 13:13 And now these three remain: faith, hope and love. But the greatest of these is love.
I John 4:16 God is love, and whoever abides in love abides in God, and God abides in him.
This year Valentine’s Day will look a little bit different at our house because I’m no longer able to eat sugar. However, I’ve discovered that a favorite of mine, chocolate covered strawberries can easily be adapted to fit a diabetic, keto, no-sugar diet. All I had to do was swap out my regular chocolate chips for a sugar-free variety. Yay!
My favorite brand of sugar-free chocolate chips are these from Trim Healthy Mama.
Another easily adapted treat is Jello Jigglers. Sugar-free jello is really easy to find and is prepared exactly the same way as the original type. We’ve been having lots of cherry this week to celebrate Valentine’s.
So, even if you’re trying to cut out sugar from your life, go ahead and try one of these quick, fun, delicious treats. I hope they will make your Valentine’s Day just a little bit sweeter!

Keto, No-Sugar Chocolate Covered Strawberries
Ingredients
- 32 oz medium-large strawberries about 40 strawberries, washed and dried
- 2 C semisweet sugar-free chocolate chips
- 1 T shortening or coconut oil
Instructions
- Line cookie sheet with waxed paper.
- In a saucepan, melt chocolate chips and shortening over low heat, stirring constantly. Remove from heat as soon as chocolate is melted.
- Dip lower half of each strawberry into chocolate mixture; allow excess to drip back into saucepan. Place on waxed paper-lined cookie sheet.
- Refrigerate uncovered about 30 minutes or until chocolate is firm, or until ready to serve. Store covered in refrigerator so chocolate does not soften.
