One of my sister’s is a follower of the popular Keto Diet and is always trying new recipes and shares them with me when she finds a good one. Although, I don’t follow the keto diet, I enjoy a good recipe and also see the benefits of occasional restriction of carbs.
When she sent over this Queso Chicken Soup recipe I immediately put the ingredients on my grocery list. Crock pot recipes are super handy on busy days/evenings and the ingredients in this soup sounded like a delicious combination…and it was!
Whether you are a follower of the keto diet or not, this flavorful, low carb soup should be on your menu rotation, it will not disappoint!
Keto Queso Chicken Soup
Ingredients
- 2 large boneless skinless chicken breast halves
- 2 Tbs taco seasoning
- 28 oz petite diced tomatoes and liquid from can
- 1/4 tsp sea salt
- 2 cups chicken broth
- 1 cup salsa verde
- 8 oz cream cheese softened
- shredded cheese and cilantro optional for topping
Instructions
- Place chicken breasts, taco seasoning, diced tomatoes with liquid, sea salt, chicken broth and salsa verde in slow cooker and cook on low for 6 hours.
- Remove chicken and shred. Place back in crock pot.
- Cut cream cheese into small cubes and place into crockpot and whisk into broth mixture until melted and well combined.
- Keep warm until ready to serve.
- Serve with toppings of choice and enjoy (shredded cheese, cilantro, onion etc)
