Sugar-Free Fruit Pizza

***I’m reposting this because I think it would be perfect for Valentine’s Day. I might make it with fresh strawberries and raspberries, just to keep the all red theme going. If you haven’t made this yet, give it a try. I think you’ll love it as much as we do!***

One of my all-time favorite desserts is fruit pizza. Its just so beautiful and refreshing!

But now that I need a sugar-free diet, I was so excited to find a recipe for a low-carb version.

Keto (Sugar-Free) Fruit Pizza

My daughter and I made this last week, with me doing the baking and she did the beautiful fruit arranging. And we gobbled it up so quickly, that we ended up making it for a second time a few days later.

This recipe is so super delicious! Even though its missing sugar, it is not missing any flavor, and I think you’re gonna love it.

Ingredients

  • For the crust:
  • 1 1/4 C almond flour
  • 1/3 C granular erythritol Gentle Sweet from Trim Healthy Mama is my favorite brand (Truvia or Splenda also taste great!)
  • 1 t baking powder
  • 1 egg
  • 5 T butter softened
  • 1 t vanilla
  • For the topping:
  • 6 oz cream cheese I use Neufchâtel
  • 2 T granular erythritol
  • 1 T heavy whipping cream
  • 1/2 C fresh strawberries sliced
  • 1/2 C fresh blueberries (can substitute fresh raspberries)

Instructions

  • Preheat the oven to 350 and grease the bottom of a 9-inch springform pan.
  • In a medium bowl, whisk together the almond flour, erythritol, and baking powder. Add in the egg, butter, and vanilla extract and stir until well combined.
  • Spread the crust mixture evenly in the prepared pan and bake for 12-14 minutes, until lightly browned on top and around the edges. Allow the crust to cool completely before releasing it from the pan.
  • While the crust is cooling, make the toppings. Mix the cream cheese, erythritol, and cream until completely combined. Spread evening over the cooled crust. Garnish with the fresh berries.
  • Cover and refrigerate for at least 2 hours before serving. Enjoy!
