Phew, what a wild few weeks! Spring is in full swing on the farm and we’ve been running all over the place for activities. Just a few of the activities from the past two weeks have included: planting of crops, baseball, t-ball, class field trips, broken arm, preschool gradation, birthday party, Mother’s day….and on and on. I am sitting here this morning with a cup of coffee and my planner breathing a mini sigh of relief that at least the next two days are a little bit less scheduled. It’s funny how our schedules can take over and we can find ourselves exhausted. Through all the craziness of this month I’ve had to remind myself to be thankful many times. Be glad it was just a broken bone, it could have been much worse. Be thankful your children are able to participate in sports. Don’t be sad, rejoice in your child flourishing and moving into kindergarten.
I said this bible verse a few times in the midst of everything: Taste and see that the Lord is good; blessed is the one who takes refuge in him. – Psalms 34:8 A good reminder to give thanks to the Lord and even in the busy seasons of life to stay in God’s word and experience the goodness of fully knowing Him.
Ok, back to the Key Lime Bars. With all the running around I was thankful to have made a pan of this bars one afternoon. They were easy to make and were a delicious treat to have on hand so we could invite Grandparent’s over after preschool graduations. There were some leftovers which were also nice to offer to employees who had stopped by during the rain to meet with my husband. I’ve found myself to enjoy being prepared for an unexpected visitor with a dessert to offer. Whether I make a pan of bars or freeze some cookie dough it’s nice to have something on hand to offer.
These Key Lime Bars are three layers. The bottom layer is a simple base of flour, sugar, butter and chopped pecans. They add a neutral but flavorful crumbly base. The middle layer is eggs, sugar, flour, baking powder and some key lime juice. It’s a thicker layer of creamy key lime goodness. You top it with a frosting made of powdered sugar, butter and lime juice for just a little added key lime flavor.
The three layers combine nicely and make a delicious flavorful bar. A refreshing Spring and Summer treat. Be sure to give them a try.
Key Lime Bars
Ingredients
- Crust:
- 1 3/4 cup four
- 3/4 cup butter softened
- 1/3 cup sugar
- 1/3 cup pecans chopped
- Filling
- 1 1/2 cups sugar
- 4 eggs
- 4 Tbs flour
- 5 Tbs fresh key lime juice
- 1/2 tsp baking powder
- Frosting:
- 2 1/4 cups powdered sugar
- 1 1/2 Tbs butter softened
- 3 Tbs fresh key lime juice
- freshly grated key lime peel optional
Instructions
- Preheat oven to 350 degrees
- Combine all the crust ingredients except the pecans. Beat at a low speed until the mixture resembles coarse crumbs. Mix in pecans
- Press mixture in bottom of an ungreased 9x13" pan. Bake for 15-20 minutes or until edges are slightly browned (do not overcook)
- Combine all filling ingredients into a bowl. Beat on low speed until mixed well.
- Pour filling over hot, partially baked crust.
- Continue to bake for apprx 18 minutes or until filling is set.
- Allow to cool completely.
- Combine frosting ingredients (except lime peel) in a bowl and spread over cooled bars.
- Garnish with lime peel if desired. Enjoy
