This is a super simple salad to put together that looks beautiful and tastes great! It actually gives off a lovely layered appearance, one that looks like you spent lots of time slaving away in the kitchen…which we all know I usually do not! During all those church potlucks growing up, this was a favorite of mine. One of the few salads, other than Doritos Taco Salad, you could get me to eat as a kid. Hard to believe considering this dish has kidney beans, but the combination of the fresh vegetables, sweet cornbread and ranch make this a crowd pleaser. (even for a kid who dares try it. :))
Layered Cornbread Salad
Ingredients
- 1 box of cornbread baked according to package and crumbled
- 2-3 heads romaine lettuce chopped
- 1 15 oz. Kidney beans, drained and rinsed
- 1 c. tomatoes chopped
- 1/2 cup red onion diced
- 1 cup corn fresh or frozen and thawed
- 1/2 cup green pepper diced
- 1/2 cup shredded cheddar cheese
- 1 cup ranch dressing of choice
Instructions
- Bake cornbread according to package direction and allow to cool.
- Using a trifle dish, layer ingredients as listed using crumbled cornbread on the bottom.
- You can top with salad dressing and toss to serve (my preference) or layer the ranch under the cheese and serve.
