Yesterday, I knew that when the kids got home from Vacation Bible School, they would be hot, thristy, and starving! We had a lot of fresh fruit on hand, and so I thought that a light, refreshing, cool fruit dip would be just the ticket.
I love this dip because it is a little lighter than a typical cream cheese dip. By combining Greek yogurt with Neufchatel cheese (the 1/3 fat cream cheese), I cut the calories but not the delicious flavor. Also, I used sugar-free Jell-O and a sugar substitute to keep it really healthy.
The kids gobbled this up while I got the rest of lunch on the table. They laughed and smiled while they told all of the fun details about VBS to each other. They have outgrown being VBS campers, and are now junior helpers, which gives them a completely different, but equally wonderful experience. I love gathering around the table around a refreshing treat and hearing all about their day.

Light, Refreshing Fruit Dip
Ingredients
- 4 ounces Neufchatel Cheese
- ¾ C Greek yogurt
- 1 T sugar substitute Gentle Sweet, Truvia, or Swerve
- 2 fresh strawberries
- ¼ t vanilla
- ½ t sugar free strawberry Jell-O
Instructions
- Blend all ingreidents until smooth. Chill. Serve with fresh fruit.
