One of my favorite things about summer is that we can just linger more with our time and schedule. Dinner time is later and more relaxed. Kids are running, jumping, and climbing – climbing up in the climbing tree – and checking progress regularly, on the berries and tomatoes. Often, I will intentionally scale back the cooking by making simpler meals – such as salads or grilling.
Sometimes, we just graze on a meat and cheese plate for dinner and enjoy it with fresh fruits and vegetables. That’ s exactly what we did the other evening, and it was so fun. I love this goat cheese from Hy-Vee, it comes with cranberry on top and really compliments the creamy tanginess of the goat cheese. Serve with your favorite crackers and light meat (such as prosciutto or salami).
I also have to share with you Stonewall Kitchen’s Hot Pepper Jelly (which can be found at Hy-Vee). I eat this frequently spread on top of cream cheese with crackers. It’s delicious and impressive – and super simple.
