Mini or bite size….hmmm, how about delicious! (And easy to send along with a hungry farmer). A couple of days ago the cooler weather finally hit us. Why hello, Fall…over the weekend it was in the 70’s and by Tuesday it was brisk and rainy. A dear friend of mine brought by some fresh picked apples and with the rainy forecast I decided it was a good day for baking. After the kiddos got home from school we debated on what to make. We settled on mini apple pies…perfect for the kiddos and easy for my husband to stick in his cooler for dessert. They are simple and fun to make and best with a scoop of vanilla ice cream on top. Enjoy!
- 1 premade pie crust
- 3 large apples, peeled and chopped
- ¾ cup of sugar
- 1 tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp salt
- 1 Tbs melted butter
- Topping:
- ¼ cup brown sugar
- ¼ cup flour
- 2 Tbs melted butter
- Preheat oven to 350 degrees
- Mix apples and sugar, cinnamon, nutmeg, salt and butter together and set aside.
- Roll out pie crust and use a round cookie cutter (or rim of drinking glass) to cut out 12 mini pie crusts
- Place crust into lightly oiled muffin tins with edges coming up along side of each spot.
- Evenly fill the 12 crusts with the apple filling.
- Evenly cover the 12 mini pies with the brown sugar topping
- Back approx. 20 minutes at 350 degrees until crust has a gold brown appearance
