The strawberries here in Iowa are really wonderful right now. Large, juicy and sweet. Every stop at the grocery store I load up with several pints for our family to enjoy. We eat them plain, sprinkled with sugar, in parfaits and one of my favorites…strawberry pie! These mini Strawberry Pies are simply adorable. I can take no credit in making them, my mom and daughter made them the night before Prince Harry’s wedding and we enjoyed them over tea to celebrate. They were the perfect little dessert and I had one proud little six year old. She is also over the moon that one of her recipes is on the blog and she can be one of the “Recipe Girls” this week. 😉
- (1) 3 oz box strawberry jell-o
- 1 cup water
- ¾ cup Sugar
- 2 Tbs cornstarch
- 4 cups strawberries, diced or sliced
- 12 mini graham cracker crusts (store bought)
- Cool Whip
- Whisk together water, sugar and cornstarch. Bring to a boil over medium high heat. Reduce heat and simmer 1-2 minutes
- Stir in jell-o until dissolved. Let mixture cool 5-10 minutes
- Spoon strawberries into the mini grapham cracker crusts. Pour jell-o mixture slowly over the tops of pie. Be sure not to overfill
- Refrigerate utnil set. Top with cool whip and enjoy
