Here on the farm we take meat seriously. As you’ve probably guessed, we raise beef, which means that most of the time there is beef in the freezer to grab at any given time. The go-to package is almost always hamburger. It’s quick and easy and there are a million ways to fix it. Another cut that I grab often is called minute steak. This cut has been tenderized, yet, it needs a little help to make it even more tender if you’re wanting a fast fix. And this is what I did with it. The meal was ready in about 20 minutes! (Guess that’s why it’s called “minute” steak.)
Before I show you the recipe, I will show you the Iowa sunrise today. It was simply magnificent. First I took the shot from my kitchen window which didn’t do much for the beautiful scene.
So then I ran out in my robe and slippers and took a few more. Even at 6:30 it was a mild, gorgeous morning. We are so blessed to be able to see the sunrise and sunset from our home. I thank God for these scenes….. so so often.

This lovely sub sandwich and tossed side salad were a’ plenty for my meal.
Minute Steak Subs
Ingredients
- 1 1/2 to 2 lb Minute Steak sliced very thin
- 3 T olive oil
- 1/2 red pepper sliced
- 1/2 green pepper sliced
- 1/2 medium-sized onion sliced thinly
- 3 T Worcestershire Sauce
- S and P to taste
- Hoagie Buns sliced
- 1/2 C mayonnaise
- 6 slices Provolone cheese or mozzarella or Havarti
Instructions
- Preheat oven to 375 degrees.Fry thinly sliced meat in med high oil for approx 4-5 minutes. Add sauce and stir. Then add veggies, s and p and cook for approximately 4-5 minutes. In the meantime, spread subs with mayonnaise. Place buns on foil-lined baking sheet. Place 6 halves on sheet. Fill with meat mixture. Top with sliced cheese and place in the oven for 7-10 minutes, until cheese melts completely.
- Serve hot.
- Serving suggestions: chips, slaw and a dill spear.
