Mississippi Bud Bars, if you think about it, honestly don’t sound like something you’d relish for dessert. But….once you focus in on them, hunger and passion take over!
My friend, Jill, made these for me and gave me the recipe some 40 + years ago. My how time flies! She and her husband, Andy, visited us last weekend so I decided to make a batch in her honor. She was pleased. (And so was everyone else. 🙂 )
This 3-layer bar drips with of nuts, chocolate, coconut and marshmallows. The thick frosting on top delights the eyes and the taste buds.
Mississippi Mud Bars
Ingredients
- Bar:
- 2 C sugar
- 2 sticks butter or margarine
- 3 T cocoa
- 4 eggs
- 1 t vanilla
- 1 1/2 C flour
- 1 1/3 C coconut
- 1 1/2 C nutmeats
- Frosting:
- 1 lb. powdered sugar
- 1 stick margarine or butter
- 1/2 C evaporated milk
- 1/3 C cocoa
- 1-2 C small marshmallows
- 1 t vanilla
Instructions
- Cream together the sugar, butter and cocoa; add well-beaten eggs, vanilla. Stir in flour and beat well. Add coconut and nutmeats, then spread in greased 9 x 13 inch pan. Bake 350 for 30-40 min
- Take out of oven and spread small marshmallows and set back in oven just until marshmallows melt; remove and cool.
- Frosting: Mix all ingredients together and spread on top of cooled marshmallows. Let set several hours before cutting.
