Mississippi Roast

This Mississippi Roast has become a favorite of my husband and I.  It is simple to make with only 5 ingredients, very little prep – Hello Crockpot! – and the end result is delicious.

The beef is melt in your mouth tender with an amazing flavor.  Top it over mashed potatoes, I like to pull a batch of (Grandma Betty’s make ahead mashed potatoes) to keep the whole meal extra simple.  This Mississippi Roast is my go-to comfort food these days.  You can also top it over pasta if desired.  

Ps – I challenge you to write Mississippi without singing it.  😉

Mississippi Roast

Ingredients

  • 1 3-4 lbs chuck roast
  • 1 packet ranch seasoning
  • 1 packet au jus gravy mix
  • 1/2 cup butter
  • 6-8 pepperonicini peppers

Instructions

  • Place roast in your crockpot and sprinkle ranch seasoning and au just mix on the top. Scatter peppers on top and then add the butter as the very top.
  • Cook on low for 8 hours.
  • Serve over mashed potatoes or noodles! Enjoy

Notes

No need to add any liquid to the roast.  
Lower calorie version - use only 1/4 cup of butter.
