Recently for lunch, the kids and I have been eating this recipe from page 239 of my Trim Healthy Mama book. It is low carb, filling, and delicious. I had never thought of pairing turkey with Italian seasoning before, but it’s a delicious combination. When I have fresh basil on hand, I layer that on top, too for added fresh flavor.
This year I plan to use some leftover Thanksgiving turkey in this recipe.
- low carb, low glycemic bread (I use Ezekial 4:9)
- skim mozzarella cheese
- lean turkey deli meat
- Italian seasoning
- Sprinkle a small amount of grated reduced fat mozzarella cheese on 2 pieces bread
- Layer with learn turkey
- Sprinkle with Italian seasoning and black pepper
- Bake on tray in the oven at 350 until cheese bubbles and melts (about 5 minutes)
This is the bread that I use for this recipe. I buy it at Costco or Trader Joe’s.
