No Bake Cookies

The other day, during mid-afternoon I had a hankerin’  for something chocolatey and sweet.  Then I thought of No Bake Cookies!  These are some of my husband’s favorites – and they require no baking and are super simple to make.  They are also way to easy to eat along the way 😉

I often forget about this cookie, but it’s just so easy to make over the stovetop – not to mention pure deliciousness.  The ingredients can be cooked together in no time.  Throw in the peanut butter, oatmeal, and vanilla after boiling for one minute, then drop by the spoonfuls on parchment paper.

While you wait, find any last bits in the saucepan to taste test :).  Let them cool and voila, they are ready!

Ingredients

  • 2 c. granulated sugar
  • 1/2 c. milk
  • 1/2 c. unsalted butter
  • 1/4 c. cocoa powder
  • 3 c. quick oats
  • 3/4 c. creamy peanut butter
  • 1 T. vanilla extract

Instructions

  • In a large saucepan add sugar, milk, butter, and cocoa powder. Slowly bring to a boil while whisking. Once at a boil allow to boil for 1 minute.
  • Remove from heat and add in oats. Mix well. Add in peanut butter, mix well. Then add in vanilla and mix well.
  • Lay out parchment paper and drop by the spoonful into cookies shapes. Allow to set for 15-20 minutes.
