Lately, we have been on the go. Last week we uprooted our house and moved all of it’s contents out to the country! We have been putting boxes put in their associated rooms, and managing to function through a time of disorganization. I haven’t been in the cooking mood so much, but I’ve been doing a good job eating my snacks. These make for a pretty terrific snack, and are a convenient excuse to walk-thru the kitchen. Add frozen yogurt or ice cream, and make it your dessert!
These tasty snacks – or desserts – may be just what you need for that added energy boost throughout the day. They only take about 10 minutes to make, and are healthier twist to the traditional chocolate no-bake cookie. These are loaded with fiber: oatmeal, flax, and chia seeds. They are also a great source of protein with the added peanut butter.
Easy, simple and a great snack.
- 1 - ¼ c. (dry) oatmeal
- ⅔ c. coconut flakes
- ½ c. peanut butter
- ½ c. ground flax seed
- ½ c. chocolate chips
- ⅓ c. honey
- 1. T chia seeds (optional)
- 1 t. vanilla extract
- Mix all ingredients together in a medium bowl until thoroughly mixed. Cover and let chill in the refrigerator for half an hour.
- Once chilled, roll into balls - about 1½" in diameter. Store in airtight container and keep refrigerated for up to 1 week.
