It’s officially back to school today for my three kids. This will be the first time in 8 1/2 years I have not had a side kick with me at all times. It’s a little bittersweet but I am excited to watch them continuing to grow and learn. On the first day of school I try to have some homemade cookies waiting for us when we get home. We sit around the table and talk all about the day. My 2nd grade daughter is already super excited for school. She can’t wait to start spelling. My third grade son is less than excited to learn but he is ready to master the presidential fitness test and play with his buddies at recess. My new kindergartner, well I’m not sure what he’s going to think of the day. He requested steak and macaroni in his lunch box. 🤦♀️
On the agenda after drop off is some reminiscing while baking some cookies My five year old has requested “the cookies with the frostin’ in the middle”…the frostin’ would be the white chocolate chips. 😀
So, oatmeal white chocolate chip cookies it will be. I will pretend they are a healthy after school snack cause they contain oatmeal 😉

Oatmeal White Chocolate Chip Cookies
Ingredients
- 1 cup butter softened
- 1 cup brown sugar
- 1 cup white sugar
- 2 eggs
- 2 tsp vanilla extract
- 3 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 1/2 cups old fashioned oats
- 2 cups white chocolate chips
Instructions
- Preheat oven to 350 degrees
- In a large bowl or stand mixer beat together butter, brown sugar and white sugar. Add in eggs and vanilla and mix until smooth.
- In a seperate bowl mix together, flour, baking soda, baking powder and salt until combined evenly and add into butter/sugar mix. Mix until well combined
- Stir in oatmeal and white chocolate chips
- Drop by teasponfuls onto cookie sheet and bake 9-12 minutes. Remove from oven and allow to cool
