Nothing says comfort like a one-pot meal. Everything thrown into one-pot. No extra dishes. A big enough amount to last for more than one meal. Beef and potatoes that are fulfilling. Vegetables that are healthy. Serve with some warm bread and your meal is together in a snap.
We are still holding onto winter, as much as I am looking forward to waving it goodbye. Between fort making indoors and loads of snow outdoors…God has blessed us with the beauty of his creation once again. I had to pause and marvel in this wonderland…

A nice, warm cup of soup in hand sounds simple and comforting to us. I’m always looking for a soup variation to try. I liked the mix of vegetables and the heartiness of the barley with this recipe. Enjoy!
One Pot Beef & Barley Soup
Ingredients
- 2 t. butter
- 2 T. olive oil
- 1 1/2 lbs. stew meat cubes
- 1 onion finely chopped
- 2 T. garlic
- salt
- pepper
- 1 T. Italian seasoning
- 1/2 c. tomato sauce
- 2 T. tomato paste
- 8 c. beef broth
- 2-3 potatoes - diced peeled, chopped
- 3 stalks celery sliced
- 3 carrots peeled, sliced
- 1/2 c. barley
- 1/2 c. corn
- 1/2 c. peas
- 1 t. dried parsley
Instructions
- Heat butter and oil in a large pot over medium heat.
- Add meat and cook until golden brown.
- Then saute onion, garlic, salt, pepper, and Italian seasoning until fragrant.
- Add tomato sauce, tomato paste, and beef broth.
- Cover and cook for 25 minutes.
- Mix in potatoes, celery, carrots, barley.
- Cook and cover for 25 minutes.
- Add corn and peas.
- Cover and cook for another 10 minutes.
- Then, cook uncovered for a few more minutes on high heat to reduce liquid until soup thickens to desired consistency.
- Garnish with parsley, and serve wtih warm bread.
