It seems as though each year I fall into the trap of thinking once we are through the holidays things will slow down a little bit. But as business owners I am quickly reminded that tasks just shift and feel equally as busy in January. Maybe next month? 😉
In the short cold days of winter I like to have easy and comforting dishes. This one pot ground beef gnocchi is the perfect combo of simple, creamy and flavorful, especially when using store bought gnocchi. I often make a quick batch of garlic bread to go along with the dish and the kiddos are pleased. Hope you enjoy!
One Pot Ground Beef Gnocchi
Ingredients
- 1 lb ground beef
- 1/2 medium onion chopped
- 3 large garlic cloves minced
- 2 dashes Italian Seasoning
- 1 14 oz can diced tomatoes with juice
- 1/3 cup chicken broth
- 3/4 cup half and half or heavy cream
- 1 pound uncooked mini potato gnocchi can use regular too, mini is our preference
- 1/2 cup grated parmesan cheese
- salt and pepper to taste
Instructions
- Brown ground beef and onion in a large pot over medium high heat until no longer pink. Drain excess grease.
- Stir in garlic and Italian seasoning. Add diced tomatoes, chicken broth, half and half or cream, and gnocchi to the pan it stir well. Once the sauce starts to slowly boil, cover pan and reduce heat to medium and cook apprx 5 min (or as long as gnocchi package states)
- Uncover pan, stir and let it sit until gnocchi has cooked through and the sauce has slightly thickened
- Stir in parmesan cheese, salt and pepper as desired. Serve immediately.
