I’m always on the look out for a simple and healthy meal to serve to my family. My children have the tendency to be picky eaters, so it also needs to be a yummy dish. A few weeks ago we were running on a tight schedule and I was in a jam for a quick meal. I pulled out an old binder of recipes from my career days in wellness and came across this Spinach and Tomato Pasta toss. Perfect! Simple, healthy and delicious! Made with only a few ingredients too. Pasta, spinach, tomatoes and cheese, you can add in some cooked sausage if desired.
This pasta also cooks up in one pot making for easy clean up. Give this recipe a try for an easy and healthy meal in a hurry. The minimal clean up is a bonus!!
{One Pot} Spinach & Tomato Pasta Toss
Ingredients
- 1 14.5 oz Italian style diced tomatoes (with juice)
- 2 cups pasta choose multi-grain to make even healthier
- 1 cup water
- 6 oz baby spinach leaves
- 1.5 cups shredded colby jack cheese or mozzarella cheese use your favoite
Instructions
- Bring water, tomatoes ad pasta to a boil in a large pan. Stir and cover.
- Simmer on medium low heat until pasta is tender (apprx 10 min)
- Add half spinach, simmer covered for 2 minutes or until wilted. Continue with other half of spinach.
- Top with cheese and serve
