Busy fall days call for comforting meals with minimal clean up. This One Pot Stuffed Pepper Casserole is a quick meal your whole family will enjoy without all the extra hassle but same flavor of true “stuffed peppers”. A dish filled with ground beef, flavorful peppers, rice and topped with cheese. Perfect! Its quick to make and one pan to clean. We had a little left over, so the next day I enjoyed it filled in a flour tortilla as a stuffed pepper burrito!

{One Pot} Stuffed Pepper Casserole
Ingredients
- 1 lb ground beef
- 1/2 cup onion diced
- 2 large garlic cloves minced
- 2 cups bell peppers diced
- 1 14.5 oz can petite diced tomatoes
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 tsp Italian seasoning
- 2 cups beef broth
- 1 8 oz can tomato paste/sauce
- 1 Tbs Worcestershire sauce
- 1 cup instant rice
- 1 1/2 cup shredded cheddar cheese
Instructions
- Cook ground beef in a large pot, drain fat and grease from pan.
- Add onion and bell peppers, cook until tender.
- Add diced tomatoes (with juice), tomato sauce and italian seasoning. Mix well and add beef broth, Worcestershire sauce and rice. Mix well,
- Bring to a boil then reduce heat and cook covered for apprx 10 minutes or until rice is tender.
- Mix in 1 cup of shredded cheddar cheese and cover again and allow to sit off of the heat for approx. 5-10 minutes until cheese is melted.
- Top with remaining 1/2 cup of cheese and enjoy!
