Peach Blackberry Cobbler
We are thick into summer and I’m realizing I need more of those wonderful fresh pies, cobblers, and crisps in my life. Don’t they make life simple and delightful? I sure think so.
It’s interesting how I am reminded of a certain person with each specific type of fruit dessert. Like with my mom, she makes this amazing rhubarb crisp. Sweet and sour, crumbly and bubbly all at the same time. With my aunt, she makes fabulous blueberry cobbler – made with hand-picked blueberries that was served in her cozy cabin.
Peaches remind me of my mother-in-law. I’ll never forget having them for the first time just with a little bit of sprinkled sugar and a quick dash of almond extract as she whipped them up for one of our family vacations together. How easy and delicious! She also has made many peach pies that I can remember with either blueberries or blackberries sprinkled in, don’t they look pretty?
I love the simplicity of a cobbler, crisp, or pie. And how we get to truly enjoy the tastiness of the fresh fruit that’s in it. I know they typically don’t last for long…there’s probably a good reason for that 🙂 As I’m still savoring summer, we have savored this homespun peach cobbler. I hope you will too!
- ¼ c. unsalted butter, softened
- 1 c. sugar ( divided)
- ¾ c. flour
- 1½ t. baking powder
- ½ t. - ¾ t. salt
- ⅓ c milk
- ¼ c boiling water ( over batter)
- For the fruit:
- 1 pint blackberries
- 4-5 peaches - pitted, and thinly sliced
- squeeze lemon juice
- dash almond extract
- Grease a 9 inch square pan. Line with foil. Preheat the oven to 350 degrees.
- In a medium bowl, combine peaches, blackberries, ¼ c. sugar, lemon juice, and almond extract. Set aside. Beat together softened butter and sugar until light and fluffy. Add flour, baking powder, and salt until crumbly. Slowly pour in milk and stir until incorporated then beat until batter is smooth. Place fruit mixture at the bottom of the pan. Spread the batter evenly over the fruit. Sprinkle with remaining ¼ c. sugar. Pour ¼ c. water over all then place in the oven and bake for 40- 50 minutes or until golden brown.
- Cool for 15 minutes before serving.

Just opened up your blog as I sit on the front porch of some friends’ cabin they are renting @ 9000’ in Buena Vista , CO.
We have been savoring the fresh juicy peaches grown in the canyon with blueberries and yoghurt. Your memories remind me of what Granny loved to serve
that was a common dessert in the South:
a special little dish of peeled, sugared peaches and blueberries over a small scoop
