I am a complete peanut butter and chocolate addict. I love the two together. Do you know those chocolate covered Reese’s Easter eggs with peanut butter in the middle? The peanut butter creaminess in them is amazing. They are just the right amounts of peanut butter and chocolate combination, which to me is like a 3:1 ratio of peanut butter to chocolate.
This week at our local Fareway store, I discovered Blue Bunny ‘Peanut Butter Party’ (the name says it all) Ice Cream! Sometimes when I try new ice cream, I find there are a few too many candy pieces, or not enough peanut butter, or too rich. This new flavor is my new favorite…and so completely wonderful.
Like ice cream, I am always looking for a new cookie to try. When I found these peanut butter cookies with chocolate chips and with oatmeal – I was on board right away!
- ½ c. butter, soffened
- ½ c. creamy peanut butter
- ½ c. sugar
- ⅓ c. brown sugar
- 1 egg
- ½ t. vanilla extract
- 1 c. all-purpose flour
- ¾ c. quick-cooking oats
- 1 t. baking soda
- ¼ t. salt
- 1 c. semi-sweet chocolate chips
- In a mixing bowl, cream butter, peanut butter and sugars; beat in egg and vanilla. Combine flour, oats, baking soda and salt. Add to the creamed mixture and mix well. Stir in chocolate chips. Drop by rounded tablespoonfuls onto ungreased baking sheets. Bake at 350 degrees for 10-12 minutes or until lightly browned.
