These take less than five minutes to mix together. Then I use my cookie scoop to form perfect little balls, and I pop them into the freezer. A cold, crunchy treat really hits the spot on a warm summer day.

Peanut Butter Coconut No Bake Cookies (Sugar-free, keto!)
Ingredients
- 1/2 C coconut oil melted
- 2 C unsweetened coconut flakes
- 6 T pressed peanut flour
- 2 T sugar-free peanut butter
- 1 squirt liquid Splenda or stevia
- 2 pinches salt
Instructions
- Combine all ingredients in a large bowl.
- Scoope out rounded tablespoons and mound them on a wax-paper-lined baking sheet.
- Freeze until solid.
- Store in the freezer.
